» Terroir
Organic wines come from organically grown vines (reg. CEE 2092/91).
The non-use of synthetic fertilizers and chemical treatments offers wines
that are truly authentic, just like the vineyards from which they come. The
secret lies in keeping the natural balance between the vineyards and the flora
and fauna surrounding them.
The vineyards behind our pinot grigio are located in the Belice Valley west of Sicily between Palermo, Trapani, and Agrigento. They are cultivated according to strict specifications that guarantee superior quality. The vines grow in relatively deep alluvial soils of medium texture with a mix of limestone and sand. These are dark soils with a good content of organic matter.

The blocks were carefully selected in order to produce an aromatic, sun-drenched wine.
» Grape harvest
Grapes are harvested between August 1 and 15, 2021 each year, then quickly transferred to the Santa Ninfa cellar in the heart of the Belice Valley.

» Winemaking
Nicola Gufo is responsible for the winemaking process.
The first juice, delicately collected using a pneumatic press, is treated oxidatively to achieve colour stability.
Fermentation is done in a stainless steel tank at a temperature of 14 °C for 12 days, using Lalvin EC-1118 yeast. The wine is then cold stabilized (-3 °C) for 12 days, and preserved on lees in a stainless steel tank.
» Tasting Notes
Pale yellow-coloured wine with a nose of citrus, muscat and flowers, offering subtle mineral notes. Good acidity on the palate leading to a persistent finish.
» Selection
The final selection is made by our tasting committee, whose members have over 40 years of combined experience in wine tasting.
»Bottling
All batches are bottled in Montreal. After every production, a final tasting is done to ensure the profile and quality conformity of the bottled wine with the initial selection. A quality control is also performed, including an organoleptic analysis.
